BELIZE-STYLE BARBEQUE
Grill it up with this amazing Belize-style BBQ featuring your choice of meat, fresh flour tortillas and coleslaw!
BBQ Meat, Pork, or Chicken
- Choice of 2 whole chickens or 4 pounds of meat/pork
- 1 tbsp of black pepper
- 3 oz recado
- 1 tbsp Season All
- 1 tbsp Complete Seasoning
- 4 cloves of garlic
- 1 medium onion
- 2 sweet peppers
- 3 oz cilantro
- 1 tbsp hot sauce (if you like it spicy!)
Instructions:
Blend all the seasonings and vegetables together. Add one litre of water. Pour over choice of chicken, pork, or meat and toss!
Grill your choice of meat for about 45 minutes (according to preference) over medium heat.
Flour Tortilla
Servings: 20 Flour Tortillas
- 2 pounds of Flour
- 4 teaspoons of baking powder
- 2 teaspoons of salt
- 2 tablespoons of shortening
- 2 cups of water*
Instructions:
Mix all dry ingredients together first then mix in the shortening until the flour is crumbly. Then, mix in the water and knead well until the dough is smooth and stretchy. Section off the dough in medium size balls. Rub a small amount of shortening on the dough balls to prevent from getting dry. Cover and let stand for about 30 minutes.
Spread shortening on the flat surface where you will press out the balls. Take one ball and press out using finger tips from the center until it is a large and thin circle. Place this on your hot comal. Cook on each side for 30 seconds or less depending on how hot your comal is.
Coleslaw
Servings: 15 cups
- 4 pounds of cabbage
- 1 pound of carrots
- 2 teaspoons of salt
- 2 teaspoons of black pepper
- 1 tablespoon of sugar
- 1 cup of mayonnaise
- 1 evaporated milk
Instructions:
Finely chop the cabbage and carrots. Then, simply just mix all ingredients!
Refrigerate.
