A Taste of Garifuna Culture: Darasa

This month, San Ignacio Resort Hotel provides you with an amazing green tamale recipe common in the Garifuna community of Belize. Prepare yourself; you’ll fall in love with this one!

 

Ingredients

  •  7 slightly green bananas, peeled and grated
  •  ½ cup coconut milk
  •  ¼ cup fresh orange juice
  •  2 tbsp. fresh lime juice
  •  ½ tsp. kosher salt
  •  ½ tsp. freshly ground black pepper
  • 6 (9″-square) banana leaves

Instructions

  1. Grate the bananas In a bowl, stir together the grated bananas, coconut milk, salt and pepper
  2. Spread out the banana leaves and on each place  ¾ cup of the banana mixture
  3. Fold the sides of the banana leaf over the filling and then for the open ends under to form a 5″ x 3″ packets; set aside
  4. Bring 2” of water to a boil in an 8-qt. saucepan fitted with a steamer basket over medium-high heat
  5. Place packets in steamer, stacking if necessary, and cover; cook until banana mixture is firm, about 20 minutes
  6. Let cool for 10 minutes before serving
